I slept horribly the other night, basically seeing awful visions whenever I closed my eyes. Sort of like very light-sleeping nightmares that kept me up for hours. At first I didn't even think I'd slept and then I looked at the clock and it was 3 a.m., so I figured I must have just been sleeping, waking myself up, sleeping, and so on.

Maybe it's because I've started thinking about doing my taxes. Who knows.

 

 

 

 

 

 

 

 

 

 

We cooked paella in class last night, and it was excellent. In all honesty, this surprised me.

I certainly mean no offense to the school, instructor or my classmates, but some of what we do and make in these culinary classes comes as a complete shock to me.   Duck that will essentially be overcooked, chilled and then re-cooked. Ceviches that include cooked fish because people are nervous about raw ingredients.

Maybe there are things this class isn't really built to do, but it would seem better to simply not do them rather than do them wrong. (I mean, the ceviche thing is wrong and funny but I also find myself wondering if I want to eat raw seafood in this classroom...)

Anyway, so my point was the paella. It was really, really good. Surprisingly good. Certainly not 100% authentic, but much better than other versions I've had.
